Nutella is allowed in our house but only occasionally, and it is very much regarded as a treat. This easy-peasy cheesecake is one which doesn't require baking but will need about 3-4 hours to set in the fridge so be sure to factor that into your timetable. I made a small cheesecake using a 7inch tin, and made a thicker base layer with half hazelnuts and half biscuits and a thinner cream layer. If you are making a larger cheesecake, or would like a thinner base and a larger cream layer, be sure to tweak the ingredients accordingly.
What you will need:
8-10 digestive biscuits (or an alternative)
80g chopped roasted hazelnuts
75g butter
200ml double cream
180g cream cheese
2 tablespoons of Nutella
Ferrero Rocher chocolates for decorating
Method
Start by melting your butter. Next, take your biscuits and chopped hazelnuts and whizz these up in a chopper so that you have a fine crumb. Add your butter until the mix can stick together on a spoon and has a texture like wet sand. Press this down into your flan tin / cake tin, ensuring its tightly packed in to the sides. Put in the fridge to chill.
Next, whip your cream, add the cream cheese and Nutella. Once the ingredients are smooth and fully incorporated, add this to your flan tin, smoothing down the top. Leave to chill for 3-4 hours.
Once set, remove from the tin and decorate with chopped hazelnuts and Ferrero Rocher chocolates.
