Lockdown Baking : what to do with your extra bananas.

Ok, I put my hands up. I am guilty of buying too many bananas. Nihaal loves them so when I finally found some after visiting 2 shops with bare shelves, I bought 8. Now we have quite a few so I am doing to make my trusty Banana Loaf A.K.A. the simplest cake in the history of the world.

You will need:


150g unsalted butter

150g caster sugar, white or light brown will do

2 large eggs

150g self raising flour

1 tsp baking powder

2 ripe bananas


Method:


Start by preheating your oven to 175 degrees c. Grease your loaf tin or baking pan with butter or oil spray.


Mix the butter and sugar together until they are pale and fluffy. While this is mixing, in a separate bowl mash your bananas . Add the eggs to the butter and sugar, mix well and then add the flour and baking powder. Finally add the mashed bananas.


Pour your batter into your tin and bake for 35 minutes. This cake will not rise as much as others as the banana keeps this cake quite dense and moist.


Once a skewer comes out clean, this means your cake is ready. Leave to cool completely and then remove from the tin.


This cake will keep for 72 hours if kept airtight.
