Easy yeast-free pizza which the kids will love to make and eat!

Yesterday lunchtime we made yeast-free pizzas from scratch and I can safely say it was one of the most fun activities we have done since schools and nurseries closed! If you want to watch a video of our antics making these pizzas, click on our Instagram link and check it out. The recipe is very simple and children will love kneading and rolling the dough. We began the process at about 11, starting with grating the cheese and prepping the tomato sauce on the hob and by the time the pizzas cooled while we cleared up, it was 11.45am. A perfect way to spend that hour in the run up to lunchtime when the kids are demanding snacks.
Ingredients
For the pizza base:
325g Self Raising flour
1/2 tsp salt
1tsp baking powder
300g natural yoghurt (do not use fat free / Greek)
For the sauce:
350g chopped tinned tomatoes / Passata sauce / approx 6 boiled peeled tomatoes
sprinkle of dried oregano
sprinkle of dried rosemary
1 clove of garlic
pinch of salt (check your Passata to see if this already has salt included)
Toppings:
grated cheese / sliced mozzarella / ham / veggies
1. Preheat your oven to 210 degrees c and place your baking trays inside. It is very important that these are already hot as the pizza base needs to sit on a very hot surface.
2. In a pan, add a little olive oil and fry your garlic. Add your tomatoes, spices and salt and turn down to a low heat.
3. In a bowl, mix your flour, baking powder and salt. Add the yoghurt and mix until you have a dough which has balled up, making sure to take all of the flour from the sides of the bowl.
4. Flour your surface and kneed your dough lightly. Divide into 4 portions, roll into a ball and then roll flat into a disc. Try to roll this as thin as you can, approx 30cm/12inches in diameter.
5. Carefully remove your hot tray. Place your pizza base on the tray and bake for 4 minutes. Take your sauce off the heat and stir. Use this time to grate your cheese and prepare toppings.
6. Once your base has baked for 4 minutes remove from the oven. I took these off the hot tray and put them on a chopping board for 2 reasons; the tray can go back into the oven to heat up again and the children are not putting toppings on to a pizza on a hot tray!
7. Spread your tomato sauce out on the pizza, sprinkle your cheese and toppings on top. Sprinkle with some dry herbs if you fancy and then transfer these back to the hot trays and bake for a further 5 minutes.
8. NB - watch your pizzas carefully to make sure they do not overbake.
