Easter Rocky Road: Easy No-Bake treat the kids will adore.

Recipes don't get much easier or much more fun than this one. A crowdpleaser for all ages, Rocky Road will be an excellent addition to your Easter weekend. Its a great way to use up any leftover Easter egg hunt choccies you may have.


You can put anything you like in here, mini eggs, crushed larger eggs, nuts, marshmallows, raisins.... the list goes on. We kept our simple with mini eggs and pastel marshmallows.




You will need:


250g chocolate (we used a mix of dark and milk)

100g unsalted butter

2 tbsp cocoa powder

1 tbsp of golden syrup

100g biscuits (we used digestives but you can use any)

plus your choice of chocolate chips / mini eggs / marshmallows etc.


Method:


Take a brownie tin and line it with cling film / foil / parchment.


Heat your chocolate, butter and golden syrup in the microwave or in a bowl over a boiling pot. Do this very carefully with kids about. Melt until smooth.


Crush your biscuits in a freezer bag using a rolling pin. Add the cocoa and crushed biscuits to your melted chocolate. Add in the marshmallows and mini eggs.


Pour your mix into the prepared tin, and scatter over a few additional eggs. Leave to set in the fridge for 2 hours. Cut into chunks and enjoy!
