Heaven in the form of chocolate cake

We baked and decorated this cake a few days ago to try and get the message across to all of the fools who are still in the restaurants, parks and shops.

Ingredients:

200g plain flour

300g sugar

50g cocoa powder

1.5tsp baking powder

1.5tsp bicarbonate of soda

1/2 tsp salt

80ml vegetable oil

1 large egg

20ml vanilla

190ml milk

190ml boiled water with 2 tsp of instant coffee dissolved in it


For the buttercream: 200 g unsalted butter, 400g icing sugar and 80g cocoa powder


Method:

Preheat your oven to 170 degrees c and grease an 8 inch baking tin. This cake mix is very liquid so it is not advisable to use a spring form or loose bottomed tin or the batter will seep out.

Measure out the dry ingredients in a bowl and mix them together. Add the oil, egg, vanilla and milk and mix well. Lastly add the coffee and combine. Place into the middle of the oven and bake for approximately 45 minutes or until a skewer / toothpick comes out wet but not coated in batter (you want some moisture to maintain the gooeyness of the cake).


Remove your cake tin and leave to cool. In the mean time, combine 200g of unsalted butter, 400g of icing sugar, 80g of cocoa powder and a tsp of vanilla to make a smooth buttercream.


Once your cake can be removed from the tin, transfer to the fridge to cool further. This will allow you to decorate your cake without damaging its soft crumb.


Decorate liberally with the chocolate buttercream and finish with grated chocolate, berries or a message containing a Public Service Announcement!
